Inside out, Over easy Omelet

I have found that eggs are a great food for me to eat.  These are easy to eat and digest, they give me a good amount of protein and many different ways to make them.  I have struggled between the fact that I love over easy eggs but having an omelet gives me more nutrition.  Below is my way of doing both.

Ingredients:

  • 2-3 Eggs
  • 1/8 cup finely chopped onions
  • 1/8 cup finely chopped ham
  • 2 slices American cheese (or preferred cheese)
  • 1 tsp butter
  • Salt and Pepper to taste

Directions:

  1. Heat large skillet on med-high heat
  2. Melt butter in skillet
  3. Add onions and ham and cook to preferred doneness (3-4 min for me)
  4. Spread out onions and ham evenly on the bottom of the skillet
  5. Reduce heat to medium
  6. Crack eggs over the ham and onions
  7. Cook for 1-2 min
  8. Flip eggs
  9. Turn off burner
  10. Salt and pepper to taste
  11. Top with cheese
  12. Let sit in pan for a minute to let cheese start to melt
  13. Remove and enjoy!
