Open Faced Juicy Lucy

My family loves burgers!  We also love a great juicy Lucy, however, they are not that easy to make at home.  I saw a recipe online that I was able to adapt to make an open face juicy Lucy.  It passed the hubby test!  🙂  One more for the file.

Ingredients:

Burgers:

  • 1 pound hamburger (85/15)
  • 1 tablespoon minced garlic
  • 1/8 cut very small diced onions
  • 2 tsp steak seasoning (or whatever seasoning you want)
  • 2 tsp pepper
  • 6 strips bacon uncooked
  • Beer bottle or can for forming
  • 1 tsp peanut oil

Insides:

  • 1/2 cup cream cheese
  • 1 cup shredded cheese (4 cheese blend)
  • 2 tsp minced garlic
  • 6 pearls fresh mozzarella

Heat cast iron skillet on med-low.  Make burger mix while heating.  When heated add peanut oil to pan.  Allow pan to heat until burgers are ready.  Pre-heat oven to 350 degrees.

Mix the hamburger, garlic, onions, steak seasoning and pepper in a bowl.  Form into three equal sized balls.  Transfer balls to a plate.  Using beer bottle press a hole down into the burger ball until it makes a cavity.  Form burger up the side of the bottle a bit to make a cup shape with the burger meat.  Wrap 2 bacon strips around each burger “cup”.  Put in fridge.

Mix cream cheese, shredded cheese and garlic in a bowl until mixed.  Pull burgers out of the fridge.  Put 2 pearls of mozzarella into the bottom of each cavity in the burger.  Divide cheese mix equally into each burger cavity.

Carefully move each burger into cast iron skillet on stove top.  Allow bottom to sear for 5 min.  Transfer skillet to oven.  Bake for 20-30 minutes until cheese mixture is golden brown.  Temp to 145.

Serve with white rice and baked beans.
