I call this a 2 meal omelet because I can only eat half of it so I am able to save the other half to have at work the next morning.

Ingredients:
- 3 eggs
- 3 pieces American cheese
- 1/8 cup mozzarella cheese
- 1/4 cup pizza sauce
- 10 slices pepperoni diced
- 1/4 cup sautéed mushrooms and onions
- 1 tbsp. butter
Direction:
- Sauté the mushrooms and onions with 1/2 tbsp. of butter on medium heat – set aside in separate bowl
- Add 1/2 tbsp. of butter to pan
- Crack 3 eggs into a bowl
- Add a splash of water
- Wisk until combined
- Add to hot skillet
- Cook until most of egg is firm and flipping is easy
- Flip omelet
- Add 1 1/2 pieces American cheese to half of the omelet
- Sprinkle half of the mozzarella on top of the American cheese
- Add pepperoni on top of the cheese
- Add Pizza sauce on top of the pepperoni
- Add remaining cheese
- Fold omelet in half over the inside ingredients
- Allow to cook for about 1 minute
- Remove omelet from skillet
- Top with sauce and sprinkle with mozzarella cheese
- Cut in half and save the rest for breakfast in the morning
