2 Meal Pizza Omelet

I call this a 2 meal omelet because I can only eat half of it so I am able to save the other half to have at work the next morning.

Ingredients:

  • 3 eggs
  • 3 pieces American cheese
  • 1/8 cup mozzarella cheese
  • 1/4 cup pizza sauce
  • 10 slices pepperoni diced
  • 1/4 cup sautéed mushrooms and onions
  • 1 tbsp. butter

Direction:

  1. Sauté the mushrooms and onions with 1/2 tbsp. of butter on medium heat – set aside in separate bowl
  2. Add 1/2 tbsp. of butter to pan
  3. Crack 3 eggs into a bowl
  4. Add a splash of water
  5. Wisk until combined
  6. Add to hot skillet
  7. Cook until most of egg is firm and flipping is easy
  8. Flip omelet
  9. Add 1 1/2 pieces American cheese to half of the omelet
  10. Sprinkle half of the mozzarella on top of the American cheese
  11. Add pepperoni on top of the cheese
  12. Add Pizza sauce on top of the pepperoni
  13. Add remaining cheese
  14. Fold omelet in half over the inside ingredients
  15. Allow to cook for about 1 minute
  16. Remove omelet from skillet
  17. Top with sauce and sprinkle with mozzarella cheese
  18. Cut in half and save the rest for breakfast in the morning
