Ingredients:
- 3-6 Large Portobello Mushroom Tops
- Stems Removed
- Gills Scraped
- Extra Virgin Olive Oil – Couple TBSP
- Kosher Salt
- Pepper
- Pizza Sauce – Small can (5 ounce)
- Fresh Mozzarella Cheese (8 ounce package of pearls)
- 1 Cup Shredded Mozzarella Cheese
Pizza Toppings
- Italian Sausage – Browned or pre-cooked
- Pepperoni (cut into small pieces)
- Whatever other toppings you want
Directions:
Preheat oven to Broil
Line a cookie sheet with non-stick aluminum foil. Wash the mushrooms with cold water and pat dry with paper towels and arrange on cookie sheet. Liberally drizzle extra virgin olive oil and season with salt and pepper on each side. Broil the mushrooms for 3-5 minutes on each side until tender. (I found 5 min for the top side up and 3 min for the bottom side up was plenty)
Turn the oven down to 375
Remove mushrooms from oven. Make sure all mushrooms are upside down on the baking sheet. Using a small spoon, spoon the pizza sauce in the cup of the mushroom. Add the pizza toppings as wanted. Add fresh mozzarella pearls and shredded mozzarella to the top.
Bake at 375 for 10 minutes
Turn oven to Broil and Broil for 3-4 minutes until the cheese is browned.
