I have learned recently that getting a normal everyday virus and stress can cause issues with maintaining my weight. It isn’t like I am 50 pounds but as I have now learned, when I lose weight it is really difficult to gain it back.
In response to this new learning, I have started to adjust my eating to increase my fat intake. This really doesn’t count as a recipe but I can tell you that adding avocados to your everyday items can help to maintain! They have a good amount of fat and the fresh taste is something that can be added to many things.
This is now my new favorite grilled cheese. I am also going to try this with a small slice of a cream cheese as well. I think the cream cheese would take this one to the next level!

Obviously, making a grilled cheese is pretty easy. I took the avocado and sliced it up, put a dusting of cayenne pepper on it for zip and a little olive oil for taste. I used American cheese because I like it melted but you could use whatever you want. I also added just a smidge of garlic salt on the outside of the bread with the butter. In the end, I have an amazing, creamy taste that has loads of calories and is a great meal for the “stomach-less” 🙂
On a side note, cooking your grilled cheese in a cast iron skillet with a low temp will make the bread really crispy and also melt the cheese and bring the avocado to the point of being really creamy as well. Also, cast iron skillet meals actually give you a boost of iron to your diet. Not a bad thing.
I have also tried this in an omelet form and it is very, very good!! Here is a pic of me assembling my sandwich.
